Aquavit can chicken
Moving on from Beer Can Chicken.This way of grilling poultry is nice and easy to vary. I have a couple of favourites, of course. Aquavit can chicken is one. Originally this is a recipe from Steven Raichlen.
He was inspired by gravlax and uses similar seasoning for the rub. Et voilá the Aquavit can chicken!
- 1 whole chicken at least 1,3 kg
- 1 can of beer of choice
- A dash of aquavit
- Couple of fresh twigs of dill
- 2 tbs dried dill
- 1 tbs gourmetsalt
- 1 tbs brown sugar
- 1 tsp mustard powder
- 1 tsp garlic powder
- 1 tsp freshly ground black pepper
- Olive oil
- Cherry smoke chips/chunks
Mix and blend the rub. Put smoke chips in a bowl, pour half the beer over it.
Brush chicken with oil and rub. Open up can extra on top – use a can opener. Now pour in the aquavit and add the twigs of dill.
Prepare grill for indirect and approx 150 degr C.
Place smoke chips on coal. When they start to smoke – place chicken on the grill and close the lid.
Chicken is ready after about 1,5 h, or at inner temp of approx 70 degr C .
