Beef short ribs with coffeecrust

Beef ribs are amazing. Unfortunately not too easy to find, though. Firstly, You have to find a good butcher… then it takes many hours on the smoker, but it is well worth the wait! Meaty fall-off-the-bone-ribs. 

This coffeebased rub is a perfect match for beef.

You need:

  • Beef ribs
  • Chips or chunks for smoking (in this recipe I used pecan) 

The rub:

  • 0,75 dl whole coffee beans  
  • 0,5 dl black pepper corns 
  • 8 tbsp sea salt 
  • 4 tbsp paprika powder 
  • 2 tbsp muscovado sugar 
  • 1 tbsp garlic powder 

Mop sauce:

  • 2 dl Applecidervinegar 
  • 2 dl Applejuice

Instructions:

  • Grind coffee beans, pepper corns and salt 
  • Mix with rest of ingredients for the rub 
  • Rub meat real good day before grilling and rest in fridge over night 
  • Prepare your smoker for  low & slow, place beer in fridge
  • Aim for 100 degr C in smoker 
  • First add chips/chunks, then put the ribs on 
  • Now is the time to bring out the chilled beverage…
    Mix sauce for mopping in a spray can 
  • Well, now You have approx 10 hrs of waiting ahead .
  • If and when meat looks a bit dry, spray with mopping sauce/juice 
  • You want the ribs to reach temp 97 degr C  
  • The ribs want to rest a while in foil or butchers paper, for at least 20 min – pref 1 hr 
  • Then, just dig in…
