Lamb racks thai style

Racks of lamb are very popular on the grill. Easy, fairly quick. Rosemary and garlic are common taste companions but get a little boring in the end. This is a way to get more heat on those racks – thai style? Well,  but maybe a little less traditional.

 

You need:

  • 2 nice racks of lamb 
  • 1 dl soy sauce
  • 0,5 dl peanutoil 
  • 4 tbsp tamarindpaste 
  • 0,5 dl rice vinegar 
  • 0,5 dl chopped cilantro 
  • 3 tbsp brown sugar 
  • 3 red chilies
  • 2 cloves of garlic 
  • 2 spring onions
  • 2 lime fruits 
  • 1 dl coconutmilk 
  • Salt & pepper
  • Pecan smoke chips or chunks / or your favourite kind

Thaigrilled racks of lamb 

Instructions: 

  • Chop chillies, cilantro and spring onions. Crush garlic cloves.
  • Grate/zest lime peel 
  • press juice of limefruit in a bowl
  • Mix all ingredients in bowl but for salt & pepper
  • Cut/slice but not deep in the fat on racks 
  • Ziplock – pour marinade in and let sleep over night in fridge
  • Prepare grill – indirect high heat – aim – 180-200 degr C 
  • Remove racks from marinade and wipe dry. season 
  • add smoke chips on fire
  • put racks now on indirect zone – crosslegged – so they stand up during grilling
  • Innertemp 55-60 degrees C – (if U want them rare – take off at 55, 60 for medium)
  • Important – let rest! 2o min or more. 
  • Cut, slice, serve
  • Enjoy!
