Smoked Texas Chili

A real texas chili keeps you warm during cold days.
In this recipe we smoke the chuck roll lightly before we put it in the pot. The peppers we use is Poblanos, Jalapenos, Rocotos och Habaneros. This gives a different chilipeppertaste to the stew.

You need:

  • Chuck Roll
  • 2 packages of bacon
  • 1 red bell pepper
  • 2 onions
  • 1 can chipotle in abodosauce
  • 3 Jalapenos
  • 1 Poblano chili
  • 3 Rocoto chili
  • 1 Habanero 
  • 3 cloves of garlic
  • 2 cans crushed tomatoes
  • 1 tbs chilipowder
  • 1 tbs cummin
  • 1 tbs paprika powder
  • freshly ground black pepper
  • Beef stocking after taste
  • 2 beers (Choose your favorite)
  • Coriander (For serving)



  • Prepare your grill or smoker for low and slow
  • Cut the Chuck Roll in Cubes
    Remove all pieces of hard fat
  • Smoke for about 45 minuter 
  • Let cool
  • Cut the bacon 
  • Save the bacon drippings
  • Sear the meat quickly in the bacondrippings
  • Chopp all the vegetables
  • Sear in the rest of the bacon drippings
  • Pour everything in a cast cast iron saucepan
  • Pour over the beer, crusched tomatoes and all the spices
  • Add some beef stock.
  • Let simmer on low heat until meat is tender.
  • The longer the better. (This stew cooked for 18 h)
  • Sprinkle some chopped koriander and serve with nacho chips or bread and some Sour Cream
