Thai fish in foil

Great thaiinspired fish steamed in a foilpackage.

You Need:

  • 4 chopped spring onions
  • 4 tomatoes cut in half
  • 2 sliced carrots
  • 125 g fresh mini corn
  • 600 g white fish or salmon sliced in cubes
  • 1,25 cups/ 3 dl coconut milk
  • 1,5 tbs lime juice
  • 1,5 tbs sweet chili sauce
  • 2 tsp ground ginger
  • 1 piece lemongrass
  • 2 lime leafs
  • Salt och pepper
  • Fresh coriander

Instructions:

  • Make small packages of double layers of aluminium Foil
  • Place Vegetables and fish in the packages.
  • mix Coconut Milk, limejuice, sweet chili and spices
  • Pour in the foilpackages
  • BBQ on middle temp for about 10-15 minutes
  • Garnish with coriander leafs
